Clams Oreganata With White Wine
What really blew my mind was the amount of clams it called for 36 small clams in shell to serve 6.
Clams oreganata with white wine. Strain the clam juice through cheesecloth or a very fine sieve into a large rimmed baking sheet like a half sheet pan. Teaspoon black pepper. Our version of baked clams oreganata starts with great clams plain breadcrumbs parsley and bacon.
Secondy i would increase the amount of red pepper flakes to 2 teaspoons for a little extra kick. Baked littleneck clam with seasoned breadcrumbs and white wine. Teaspoon kosher salt.
Cup dry white wine. Some may open only a crack. Let the oil and garlic steep in a small bowl for 30 minutes.

Using tongs transfer opened clams to a large bowl to cool continuing to cover sauté pan and checking frequently for newly opened clams. As soon as they start to open remove them to a bowl. Cook garlic in oil in a deep 4 to 6 quart heavy pot over moderately low heat stirring until garlic is fragrant about 1 minute.
Continue until last clams have opened. With that said i thought this was real good as is but could have been better. Butter olive oil and red pepper flakes are normally in there as well.
